Pumpkin Soup

Warm your soul with a bowl of rich, creamy Pumpkin Soup that’s perfect for cozy evenings. This simple yet elegant dish is made with fresh pumpkin, caramelized onions, and a hint of garlic for a comforting, earthy flavor. With its smooth texture and natural sweetness, this soup is a favorite for both kids and adults alike.

Ingredients:

  • Pumpkin, washed and chopped into small pieces
  • Onions, peeled and sliced
  • Garlic, peeled and lightly crushed
  • 1 tablespoon oil or butter
  • Salt and pepper to taste

Method:

  • Heat 1 tablespoon of oil or butter in a pan.
  • Sauté onions and garlic for 2-3 minutes until they start to color.
  • Add the cubed pumpkin and sauté for an additional 2-3 minutes until the pumpkin develops some color. Brown spots on the pumpkin add flavor to the soup.
  • Cover and cook until the pumpkin is tender and cooked through.
    Puree the pumpkin.
  • Pour the puree back into the pot, adding more stock if needed. Season with salt and pepper.
  • Bring everything to a boil.
  • Serve Hot.
