Ingredients:

  • Mushrooms, washed and thinly sliced
  • Olive oil
  • Onions
  • Garlic
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

Method:

  • In a heavy-bottomed pan, add olive oil. Sauté onions and garlic until the onions become transparent.
  • Add the mushrooms. They will release water and shrink within a few minutes (2-3 minutes, depending on the type of mushroom).
  • Allow the mushrooms to cool. Blend them to make a smooth paste.
  • Cook the paste in the pan for about 3-4 minutes. You may add water to adjust the consistency.
  • The creamy mushroom soup is ready without cream! Top with fresh coriander leaves and serve with your choice of bread.
